What you are talking about is called a fossil. The animal or plant dies, falls into sediment and then rots. It's structure is replaced by the sediment and becomes rock preserving the structure of the animal or plant as a differentiated mineral or group of minerals. Many people think of fossils as preserved bones, that is not true, they are in fact stones that have preserverd the impression of the bones. Same with leaf impressions or foot steps, the actual leaf is not preserved just its imprint.
