Answer A Question
Should I brown the itialian sausage before I put it in the crock pot?
Answers
If you are making the sausage for a slow cook (crock pot) then yes definitely. BUT, the sausage should be pricked all over first, the oil (olive or sunflower) should be very hot and the pan should not be a non-stick pan. Flash fry the sausage for about 20 seconds, just enough to release the juices and oils before you add it to the pot, if you add spices to the oil before you flash fry the sausage then the flavour will be passed on and you can add the oil to the pot too.
The point is to NOT cook the sausage before you add it, just sear the skin and outer of the sausage which will seal in most of the flavour, pricking the sausage will allow the juices to flow out whilst retaining the bulk of its flavour.
Oh yes, IMHO Hungarian sausage is far better than Italian sausage... hungarian paprikas kolbasz *starts dribbling*
I'm eating one now, looks like it may have been boiled or very lightly fried before cooking in the sause for a while. The sausage is very tender, I know one thing let the sause do the cooking.
