curing is a preservation method using salt to dehydrate the meat and to prevent the growth of bacteria which would rot the meat. The method was developed many many years ago well before the development of refrigeration as a way of freezing food to prevent its deterioration. Ham which has been salted (cured) needs to be very well boiled in order to remove the salt content. Many countries which experienced problems safely storing food also developed the technique of 'smoking' to cure meats and cheeses hence smoked salmon, smoked beef, beef jerky and others especially including sausages.
If the ham is cured of anything, it is cured of the ability to rot / go bad.
