I think you have confused the terminology. Gneiss refers to weathered granite and clastic is a broad term refering to rocks composed of fragments, or clasts, of pre-existing rocks. On that basis a gneiss clastic would be a rock formed from eroded or weathered fragments of granitic rocks.
Granite is, of course, an igneous rock formed by extreme heat and pressure. It is therefore a 'chemical' or mineral form of deposit and definitely not organic.
